Healthy Bacon and Egg Pie for the whole Family
Healthy Bacon and Egg Pie that the whole family can enjoy!
- Sweet potato – 1 cup of cooked and mashed
- Broccoli – 1 cup of cooked and mashed
- 6 eggs
- Chicken stock
- 1 brown onion
- 1 glove of garlic
- 400g of bacon (Fry the onion, garlic and bacon in pan and leave some rashers for the bottom of pan.
- 1 cup of cooked pasta (for the kids)
Cook and mash (separately) the sweet potato and broccoli.
Fry in a pan, bacon, onions and garlic.
Combine the eggs and the chicken stock. Add in the cooked bacon and onion to mixture. Set aside
Grease the oven proof pan. Place the 4 rashers on the bottom of the pan, then spread the mashed sweet potato and broccoli then add the egg mixture (with the bacon onion and garlic) and place rashers of bacon on the top.
Bake in moderate oven for approximately 30mins
Enjoy your healthy bacon and egg pie with a garden or Greek salad and it is only roughly 500 calories for a serve……… enjoy!
