The Best Left Overs Fritters Ever!
So this recipe is so quick and easy to make. It requires next to no time to throw together and cook. Probably quicker than deciding what take away to order! You can make then as healthy as you wish. The Best Left Overs Fritters Ever!
The basic Fitter Recipe is:
- 1 1/2 cups of self raising flour (you can use wholemeal or a grain free alternative)
- 1 cup of milk (you can use almond, coconut or lactose free)
- 2 eggs
Blend together until combined.
Now the Fun Part ……. adding in the Left overs!
- left over roast vegies
- left over cooked meat (chicken, roast beef etc)
- any the left over salad ingredients (carrots, zucchini, sweet potatoes, spinach, tomatoes )
- cheese and bacon
- tin of corn
Any of these add in will be delicious and what is even better you have used all the left overs in the house with one quick and easy meal.
Mix in the leftovers that you have into the mixture.
Heat some oil in the fry pan and then pour roughly 1/4 cup of mixture into the fry pan.
Cook for 3 to 4 mins each side or until golden brown.
Serve with avocado or Greek yogurt (the kids might want some BBQ sauce, so let them have a little bit)
